Valheim's in-game hosting ties the world to one player's session. Everyone else has to wait for that person to be online, their upload carries every other player, and the save lives on their machine. A dedicated server removes all three problems at once.
Raids still land, crops still grow and the day still passes while you are at work. Your friends join whenever they like, on their own schedule, at the same address every time.
The world files are yours: download them from the panel file manager or over SFTP whenever you want, and upload a world you have already started rather than beginning again.
Crossplay lets friends on Xbox and the Microsoft Store join a Steam group. It is a single toggle in the panel, and it changes how everyone connects — so it is worth knowing which one you want before you invite people.

Xbox and Microsoft Store players can join. Valheim then stops accepting direct connections, and everyone joins with a six-character join code instead of the address.
You can switch between them whenever you like — it takes a restart, and nothing about the world changes.
Player count is not what drives it — every server is capped at ten. What grows is the world: Valheim holds explored terrain and built structures in memory, so a world you have played for months costs more than a fresh one, and mods cost more again.
